The winning Healthy Recipe: Garbanzo Cerviche

Congratulations to Dr. Mariel Phillip of Heart Chiropractic and Wellness in Providence for submitting the winning recipe for our Healthy Recipe contest as part of the Straighten Up, RI campaign. Dr. Mariel’s recipe, Garbanzo Cerviche, is below. For her efforts, Dr. Mariel will receive a $100 gift card, courtesy of the Straighten Up, RI campaign. Congratulations, Muriel!

Ceviche Garbanzo Cerviche

You'll need:

2 Cans of Cooked Garbanzo Beans (Chick Peas)
1 Red Bell Pepper
1 Tomato
2 Zucchini's (Courgette's)
1/2 of Large Red Onion
Handful of Cilantro
1 Avocado
1 Lime (Juice only)
Salt, Pepper and Paprika to your taste 

If you DARE;

Chopped Cerrano Pepper to your taste
1. Chop ALL vegetables (except Garbanzo beans) into bite sized pieces.
2. Combine ALL vegetables, cilantro and Garbanzo Beans together.
3. Season with Salt, Pepper and Paprika to your taste.
4. Squeeze Juice of Lime
5. Enjoy....

-Chickpeas are packed with nutrients, plant based proteins, high in fiber and a heart healthy food.

-Avocado is heart-healthy with monounsaturated fats, vitamin K, folate, vitamin C and fiber.

-Zucchini (courgette) are a high source of Antioxidants and Vitamin C.
